You need to stop the BIND DNS Server "named" which is coming with MacOS X 10.5 or 10.6 (Client or Server)

The DNS Server process "named" is started and restarted by the "launchctl" function inside the MacOS X system.

To stop the BIND DNS Server, unload the launchctl configuration:
launchctl unload /System/Library/LaunchDaemons/org.isc.named.plist

To start the BIND DNS Server again, load the launchctl configuration

launchctl load /System/Library/LaunchDaemons/org.isc.named.plist

More Information on launchctl can be found at en.wikipedia.org/wiki/Launchd
